Pat's Happy Steak

Once you try this simple recipe for grilling a steak, you won't use anything else!!!

You will need:

  • Charcoal or gas grill. You can use the oven broiler, or blacken on stovetop, if you wish, but my personal favorite is a very hot charcoal fire.
  • Your favorite cut of beef steak. (I'm partial to a thick and juicy porterhouse).
  • Some Old Bay seasoning
  • And of course, Happy Dogs Hot Sauce!!!

    A friend of mine turned me on to a rub called Howlin Dogs's Wild Spice Blend. It comes out of Grafton IL. If you can find it, use that instead of Old Bay seasoning. Their website is: www.howlindogspice.com, to find out where they carry it.

    On one side of steaks, sprinkle with a decent coat of Old Bay, or Howlin Dogs, then liberally put my hot sauce over that, take a fork, and stab seasonings and sauce into the meat . Then, turn over and do the same to the other side.

    Let the meat sit for about 20 minutes or until the charcoals are at their hottest point.

    Cook steaks on very hot grill to your liking.

    If you like blackened steak, here's how to do it.

    In a cast iron or old skillet heat up butter (1/4 to ½ stick depending on size of pan), very hot, throw in steak and cook as fast as you can and turn over and do the same thing to the other side. It's an excellent way to do steak indoors. However, open a window or two or turn the exhaust fan on, because it can get real smoky in the kitchen, but once you try it you'll know it was worth it!
